The Ultimate Chocolate Cake

Whether it's a birthday celebration or special anniversary, this is the cake you need!

I can't take any credit for this recipe - it is 100% Barefoot Contessa's recipe with no changes made to it whatsoever!

  • 1 ¾ cups flour

  • 2 cups sugar

  • ¾ cup cocoa powder

  • 2 tsp baking soda

  • 1 tsp baking powder

  • 1 tsp salt

  • 1 cup buttermilk (or yoghurt mixed with milk if difficult to find buttermilk)

  • ½ cup vegetable oil

  • 2 large eggs

  • 1 tsp vanilla

  • 1 cup freshly brewed hot coffee

  • 170g dark chocolate

  • 225g butter

  • 1 egg

  • 1 tsp vanilla

  • 1 ¼ cup powdered sugar

  • 1 tbsp coffee

  • ½ tsp salt

Set the oven to 180 degrees. Butter two round pans (8-inch) and line with

baking paper.

Sift together the flour, sugar, cocoa, baking soda, baking powder and salt into

bowl of an electric mixer and mix on low speed.

In another bowl, combine the buttermilk, oil, eggs, and vanilla.

With the mixer on low, slowly add the wet ingredients to the dry.

With the mixer on low, add the coffee and stir to combine.

Pour batter in tins and bake for 35-40 mins.

When done cool on baking rack.

Make the batter: melt the chocolate and leave to cool. In electric mixer, beat

the butter at a high speed for 3 minutes until fluffy.

Add the egg yolk and vanilla and beat for 3 minutes.

Turn the mixer to low, add the powder sugar and beat at medium speed.

Dissolve the coffee powder in 2 tsp. of hot water. On low speed, add the chocolate and coffee to the butter and mix.
