With dark chocolate, dates and walnuts
Perfect for Eid or any other celebration! Best served with tea. Very crumbly biscuit. Start on these the night before. You will need a 'maamoul mould', which can easily found at Middle Eastern shops, or even on Amazon/ebay.
Ingredients:
2 cups flour
1 tsp baking soda
½ tsp salt
115g butter
1 cup brown/dark brown sugar + white sugar
1 egg (+1 yolk)
¼ cup 'Greek' yoghurt
2 tbsp milk
1 tsp vanilla extract
2-3 ripe bananas (brown spots on outside)
1/3 cup chocolate chips
1/4 cup walnuts
1 tsp cinnamon
Directions:
Set oven to 180. Line a greased loaf pan with parchment paper.
In a bowl, whisk together the dry ingredients: flour, cinnamon, baking soda,
chocolate chips and salt.
In another bowl, mix together the wet ingredients: melted butter, sugar, egg,
'Greek' yoghurt, vanilla and milk.
Add the mashed bananas and stir.
Gradually add the wet and dry ingredients together.
Decorate with extra banana if you have one (sliced) and some grated dark chocolate.
Bake for 50 mins – 1 hour.
