Salmon Fish Cakes

For 4 salmon cakes

Ingredients:


  • 4 salmon fillets

  • 1 tsp. lemon grass

  • 1 tsp grated ginger

  • 25g coriander

  • 1.5 tbsp. tamari (or soya sauce)

  • 1/2 tbsp. spring onions

  • 1 tsp. miso

  • 1 tsp. lime zest

  • Salt

  • Pepper

  • Panko breadcrumbs (optional)


Directions


Grate the ginger and lemon grass; chop the spring onions and coriander.


In a food processor, blitz all the ingredients together. The salmon should be in small chunks.


Form four patties and roll in panko (optional).


Fry the salmon cakes for 3-4 mins on each side.
