For 30 small bars
Ingredients:
3 cups oats
1 tsp. baking powder
1/4 tsp. salt
1 1/2 tsp. cinnamon
1/4 tsp. nutmeg
1/8 tsp. allspice
1 cup canned pumpkin
2 tsps. pure vanilla extract
1/3 cup (or less) maple syrup
1 tbsp. melted coconut oil
1/3 cup dark chocolate chunks
2 tbsps. shredded coconut
8 mejdool dates
Directions
Preheat oven to 350°f (176°c).
Blend the oats to make 'oat flour'. Add the spices, baking powder and salt.
In a separate bowl, whisk together the pumpkin, maple syrup, vanilla and oil until smooth and creamy. Add in the oat mixture.
Fold in the dates, dark chocolate and coconut.
Bake for 15 - 25 minutes until golden brown.
