Gateau Chocolate de Mamie

A rich, decadent traditional French chocolate cake.

  • 100 g dark chocolate

  • 4 eggs

  • 200 g caster sugar

  • 80g flour

  • 90g butter

  • 20g cocoa powder

  • 1 tbsp crème fraiche or 'Greek' yoghurt

  • 1 tbsp vanilla extract

  • 1 tbsp hot coffee (or a small sprinkle of coffee powder/granules)


Set the oven to 160 degrees.

Separate the egg whites and egg yolks.

In a large bowl, mix the butter and half the sugar together. Add the egg yolks.

Melt the chocolate, then add it to the mixture while stirring.

Add the flour, vanilla, crème fraiche, and cocoa powder.

In another bowl, whisk together the egg whites with the rest of the sugar, then

add to the previous mixture.

Cook in the oven for 30 mins.

Served room temperature, with powdered sugar on top.
