Double Chocolate Cookies

Rich dark chocolate cookie with creamy, melted white chocolate in the centre


Perfect for Eid or any other celebration! Best served with tea. Very crumbly biscuit. Start on these the night before. You will need a 'maamoul mould', which can easily found at Middle Eastern shops, or even on Amazon/ebay.


Ingredients:

  • 60g butter

  • 110g Flour

  • ½ tsp. Baking soda

  • Sprinkle of maldon salt

  • 100g dark brown sugar (light brown and dark brown)

  • 25g caster sugar

  • 1 egg (room temperature)

  • 10g corn flour

  • 50g dark chocolate

  • 15g cocoa powder

  • Half bar white chocolate (milky way perfect)

Directions:


Cream together the butter and sugar. Add the egg. Mix.


Melt the dark chocolate and leave to cool.


Mix all the dry ingredients together (flour, salt, baking soda)


Stir in the dark chocolate to the wet mixture, then add in the dry mixture.


Put into the fridge for a few hours.


Roll the dough into about 8 balls. Add piece of white chocolate inside. Leave

them in the fridge overnight or for a few hours.


Bake at 170c for 14 mins.
