The cookie dough only consists of an egg, peanut butter and some sugar!
Perfect for Eid or any other celebration! Best served with tea. Very crumbly biscuit. Start on these the night before. You will need a 'maamoul mould', which can easily found at Middle Eastern shops, or even on Amazon/ebay.
Ingredients:
2 granny smith apples (or other apple of choice - sour is better)
57g butter
¾ cup brown sugar
1/8 tsp salt
¼ tsp cinnamon
½ tsp vanilla
2 tbsp lemon juice
½ tbsp cornstarch
1 roll of puffed pastry
Directions:
In a pan, melt the butter with the brown sugar. Add a splash of water.
Add the diced apples. Sprinkle in the salt and cinnamon.
Add the lemon juice and the cornstarch. Cook until soft.
When done, roll out the pastry to the size of a cup. Put in the filling and seal
with water. Pinch the sides.
Heat up oil to 175 degrees. Cook until brown. Add powdered sugar on top.
Serve with ice cream or salted caramel sauce (1/2 cup brown sugar, ¼ cup
cream, 2 tbsp butter, 1 pinch salt).
