Sweet Potato Brownies

These healthy brownies may taste a little different to 'normal' brownies, but they are just as delicious in their own way!


Best warmed up. Can put in the microwave for a minute. If you have a craving for something sweet and chocolatey but want to stick with something healthy, these are for you! If you are looking for a brownie recipe that is more decadent, click here:


Ingredients:


  • 1 Roasted sweet potato (large)

  • 6 Medjool dates

  • 3 tbsp. Maple Syrup

  • 50g Ground almonds

  • 1 tbsp. Melted coconut oil

  • 2 Eggs

  • 50g Oats

  • 4 tbsp. Cacao powder

  • 1 tbsp. Peanut butter

  • 50g Melted dark chocolate

  • ½ tsp. Baking powder

  • ¼ tsp. Salt

  • 1 tsp. Vanilla

  • 2 tbsp. Milk

Directions:


Set oven to 180. Line a greased loaf pan with parchment paper.


In a bowl, whisk together the dry ingredients: ground almonds, ground oats,

cacao powder, baking powder and salt


In a food processor, blend the dates and sweet potato until smooth. Add the

rest of the wet ingredients: melted chocolate, maple syrup, coconut oil, eggs,

milk, peanut butter, vanilla and milk


Slowly combine the wet and dry ingredients


Pour into baking pan. Add some chopped chocolate on the top.


Bake for 30 mins – 45 mins until fork comes out dry.
