Makes 12 buns
Perfect to bring to the gym or on long runs.
Ingredients:
Dough
60 ml milk
1 egg
45g butter
345g flour
60g sugar
7g instant yeast
1 tsp salt
120 ml water
Filling
70g butter
60g brown sugar
1 ½ tbsp cinnamon
Frosting
42g cream cheese
28g butter (soft)
85g confectioner’s sugar
½ tsp vanilla
1-2 tbsp milk
Directions:
In a bowl, combine the dry ingredients: flour, sugar, salt, instant yeast
Warm up the milk, water, and butter. When hot (but not boiling), add to the mixer.
Use a dough hook
When dough starts coming together, add an egg. Turn up speed, until the dough
starts coming away from the sides
Flour your surface and scrape the dough out. Dust your hands with flour, and
kneed for 5 minutes
Place in a lightly greased bowl for 15 mins, covered with a cloth
Make filling: fork together the butter, sugar and cinnamon
Roll out the dough into a rectangle (roughly 10-inch by 17-inch). Spread filling on
top with a knife.
Roll out the rectangle (from long end) and cut into 12 rolls. Can cut off ends. Use
thread to cut
Butter a 10-inch cake pan and spread out the rolls so they aren’t touching.
Leave to rise somewhere warm for 1h30
Put into oven for 25 minutes at 170c. Can cover with foil for the last 5
minutes
Meanwhile, make the frosting by whipping all the ingredients.
When the buns are out of then over, cover in the frosting so it melts in. Take
out of the pan when slightly cooler.
