Chocolate Mousse

These delicious, rich chocolate pots are a great way to satisfy a chocolate craving.


The recipe for these healthy fruit strips were inspired by a trip to Iran, where 'fruit leather' or 'lavashak' is a popular way to enjoy a dried fruit snack. Traditionally, the fruit mixture is left outside in the sun to harden and then rolled, but for the sake of convenience and time, an oven can also be used!


Ingredients:

  • 200g Dark chocolate (Nestle Dessert Noir is the best)

  • 6 Eggs

  • White sugar (to taste - I usually add about 50g)

  • 1tsp Salt

Directions:


Melt the chocolate in a bain-marie. Leave to cool down.


Separate the egg whites from the egg yolks.


Add the salt, and sugar to taste, to the egg whites. Beat until very firm.


Add the chocolate slowly to the egg yolks and mix well.


Very gradually and lightly, add the egg whites.


Put in the fridge for 3 hours.


Serve with some grated chocolate on top.
