Brown Rice Salad

With orange juice dressing, pecans, cranberries and feta

Good frozen


  • ¼ cup brown rice

  • 1 orange

  • 1 tbsp dried Cranberries

  • 1 cup spinach

  • 1 tbsp pecans

  • ¼ cup peas

  • 1 tbsp diced onion

  • 2 tbsp crumbled feta

  • 1 tbsp olive oil

  • 1 tbsp lemon juice

  • 1 tsp orange juice


Cook the brown rice for about 25 mins – until soft.

Cook the peas and put to the side.

Toast the pecans and put to the side.

When the rice is done, add it to a bowl. Stir in the orange cubes, cranberries,

spinach, pecans, peas, onions and feta.

Add the lemon and olive oil dressing.
