Köfte tray





Ingredients:


Köfte

  • 500g minced beef

  • 1 tbsp tomato paste

  • 1 tsp pomegranate molasses

  • 1 minced garlic

  • Handful bread crumbs

  • 1 tsp baharat seasoning

  • 2 tbsp chopped parsley

  • 1 white onion

  • 1 egg


Other

  • 1 red onion

  • 2 aubergines

  • 1 cup tomatoes or cherry tomatoes

  • 1 cup tomato sauce

  • 1 tbsp lemon juice

  • Feta cheese to taste


Directions


Chop the white onion and fry in olive oil. Mix with the other köfte ingredients and season to taste. Form into patties.


Fry the patties in olive oil (doesn't have to be cooked all the way through, just colour on outside).


Fry the sliced aubergine in more olive oil. Soak up oil on paper towel.


In a pan, layer the köfte patties with the aubergine, tomatoes and raw red onion. Pour over the tomato sauce mixed with lemon juice, some water and salt.


Bake in 200°c oven for about 30 mins (390°f). Before finished, sprinkle over feta to melt a little, then serve with fresh parsley.
